Saturday, May 4, 5 p.m.-6:30 p.m.

Celery root, or celeriac, is one of those ugly root vegetables you see in the produce aisle and may have no idea what to do with it. We’ll show you different ways of preparing this delicious and versatile vegetable, including a purée/soup, a zesty Celeriac Remoulade salad, and a gratin of celeriac. Served with wine.

Based on the incredible recipe popularized by Mark Bittman at The New York Times, Chef Laura will demo the steps to turn out perfect artisan-quality bread every single time. We’ll do Basic, Whole Wheat Raisin and Walnut, and Rosemary Olive variations. Served with wine.

Learn how to make some of the basics of North African cuisine. We’ll make harissa, the spicy condiment, and preserved lemons, and then taste three different ways to use these lovely DIY ingredients: A traditional Spicy Chicken, Preserved Lemon and Harissa Tagine; Niçoise Olives with Harissa and Picholine Olives with Preserved Lemon. DEMO: “Rough Puff” Pastry, Chef Laura, $50

Saturday, Sept. 14, 5 p.m.-6:30 p.m.

If you’re a fan of The Great British Baking Show, you’ve no doubt heard of “rough puff,” the quick(er) way to make delicious puff pastry. Chef Laura will demo how to make this feuilletage rapideand then three different preparations: Cheesy Straws, a Tomato and Goat Cheese Napoleon and Palmiers. Served with wine.

DEMO: Fresh Pasta at Home, Chef Laura, $50

Saturday, Sept. 28, 5 p.m.-6:30 p.m.

Chef Laura will show you how to make pasta at home using your hands and a traditional Italian pasta maker. You’ll see and sample Ravioli, Fettucine and Handkerchief pasta in a variety of sauces. Served with wine.

 

The Perfect Pear Class Cancellation Policy

If you are unable to attend a class, please provide at least 48 hours’ notice, 
and we will credit the entire cost of your class toward another class within the next 12 months or to be used at The Perfect Pear as a gift certificate. You may also substitute someone else for your position in the class. 

As you know, it takes time and resources to prepare for the classes, so if you cancel within less than 48 hours of the class or do not show, there is no credit given.

In the event we must cancel a class due to weather or lack of participation, 
we will work with you to determine a make-up date or offer you a full refund.
